Roasted Olives with Citrus and Herbs

Yield: Makes 1 pint


Ingredients

1 pint mixed olives
2 Tbsp. extra virgin olive oil
¼ tsp. crushed red pepper flakes
Several pieces of citrus zest
Several sprigs of herbs such as thyme, rosemary and oregano


Preparation

Oven Temperature: 550-580 degrees

Flame Height: 3

Pour olives into a cazuela or other baking dish.  Drizzle with oil and add remaining ingredients.  Stir and place in the doorway of the oven.  Roast for about 5 -10 minutes, stirring once or twice,  until the olives are nicely blistered.  Serve warm.
