Crispy Mac N Cheese Bites

Crispy Mac N Cheese Bites

Yield: Makes about 50 bites


2 cups + 2 Tbsp. whole milk
2 Tbsp. butter
2 Tbsp. flour
2 lbs. sharp cheddar cheese, grated
2 tsp. Worcestershire sauce
¼ tsp. cayenne pepper
Kosher salt
1 lb. elbow macaroni, cooked
2 lg. eggs
3 cups panko breadcrumbs
Vegetable oil


Heat 2 cups of the milk to just below a simmer.   On a stovetop in a small saucepan melt the butter and whisk in the flour.  Slowly pour in the milk, whisking to incorporate until smooth.  When sauce begins to thicken, remove from heat and add the cheese.  Add Worcestershire, cayenne and salt to taste, mixing well.  Add the macaroni and fold to combine.  Pour into a shallow pan, cover and refrigerate until cold and solid, about 2 hours.

Use a meatball or small ice cream scoop to form macaroni into bite-sized balls and arrange on a parchment-lined sheet pan.  Cover and place in the freezer for several hours or overnight.

In a shallow bowl, beat the eggs with the remaining 2 Tbsp. of milk.  Dredge the frozen macaroni balls in egg mixture and then panko.  Return to sheet pan and freeze again until ready to fry.


Oven Temperature: 500-530 degrees

Pour oil into a cast iron skillet to come up halfway, or about 1-in.  Heat in the center of the oven until oil registers 350 on a candy or oil thermometer.

Carefully add the frozen macaroni bites to the oil.  Don’t overcrowd; you will do this in batches.  Fry until golden brown all over and hot inside, about 5 minutes.  Remove with a slotted spoon and drain on paper towels.

Allow the oil to return to 350 each time before frying additional batches.

Sprinkle with a little more salt before serving.
