BBQ Spiced Salmon Bites with Chipotle Rémoulade

Ingredients
1 lb. center cut salmon fillet, skinned and cut into 1-in. cubes
¼ cup dry barbecue spice rub *
Olive oil
¾ cup mayonnaise
½ clove garlic, pressed
1 Tbsp. capers, minced
1 Tbsp. lemon juice
1 tsp. paprika
1 tsp. sauce from a can of chipotle peppers in adobo sauce, easily found in most supermarkets
Preparation
Oven Temperature: 550-580 degrees
Sprinkle the salmon cubes on all sides with the spice rub, drizzle with a little oil, then cover and refrigerate for 20 min. or up to a day. Stir remaining ingredients together in a shallow bowl to make the sauce. Line a shallow, thin baking pan with aluminum foil and drizzle with a little olive oil. Spread the salmon cubes out evenly.
Flame Height: 5
Place the pan in front of the flame for 2 to 4 minutes, rotating the pan 180 degrees after about 1 ½ minutes. Serve with toothpicks and rémoulade on the side for dipping.
