Spinach Salad with Lemon Vinaigrette

Ingredients
1 lb. baby spinach leaves
1 Tbsp. lemon juice, fresh
1 Tbsp. Champagne vinegar
1 tsp. shallot, finely minced
1/2 tsp. Dijon mustard
1/2 tsp. lemon zest
Kosher salt and freshly ground black pepper
6 Tbsp. extra virgin olive oil
Preparation
- Pick over spinach and wash if necessary.
- Mix lemon juice, vinegar, shallot, mustard, salt, and pepper in a small bowl.
- Slowly whisk in olive oil. Taste to adjust seasonings.
- Toss with spinach and serve.
