Spinach Salad with Lemon Vinaigrette

Yield: Serves 6-8


1 lb. baby spinach leaves
1 Tbsp. lemon juice, fresh
1 Tbsp. Champagne vinegar
1 tsp. shallot, finely minced
1/2 tsp. Dijon mustard
1/2 tsp. lemon zest
Kosher salt and freshly ground black pepper
6 Tbsp. extra virgin olive oil


  1. Pick over spinach and wash if necessary.
  2. Mix lemon juice, vinegar, shallot, mustard, salt, and pepper in a small bowl.
  3. Slowly whisk in olive oil. Taste to adjust seasonings.
  4. Toss with spinach and serve.
