Fennel Citrus Salsa

Yield: Serves 4 -6


1 each fennel bulb, very thinly sliced, core discarded
3 each oranges, blood oranges, grapefruit or other citrus, peeled and sectioned
½ small red onion, sliced paper thin
Juice of 1 lemon
2 Tbsp. olive oil
1 tsp. Champagne vinegar
Kosher salt and freshly ground black pepper 


Mix all ingredients together and serve chilled.
