Yield: Serves 4-6
4 each russet potatoes, scrubbed but not peeled
1/3 cup butter or melted fat such and schmaltz or duck fat
Svaneti salt blend or other seasoned salt*
Oven Temperature: 500-530 degrees
Place potatoes in a pot, cover with cold water and bring to a boil on the stove. Simmer for 10 minutes, drain, cover with cold water and let cool to room temperature. Drain again and pat dry. Carefully cut the potatoes crosswise almost, but not all the way through in 1/8-in. slices.
Flame Height: 2.5
Place in a baking dish and brush with butter or melted fat. Sprinkle with a little salt and place in the center of the oven. Bake for a total of 30-40 minutes, brushing with fat and rotating every 10 minutes or so. When the potatoes have begun to fan open, add some seasoned salt to the remaining fat and brush in between the slices as much as possible.
*Svaneti salt may be ordered from World Spice Merchants
