Oven Roasted Fresh Pizza Sauce

Oven Roasted Fresh Pizza Sauce

Yield: Makes about 1 quart


5 lbs. tomatoes such as beefsteak or romas, cores removed
¼ cup olive oil
4 cloves garlic, chopped
1 Tbsp. dried oregano, crumbled
Kosher salt and freshly ground pepper




Oven Temperature: 350-450 degrees

Arrange tomatoes in a large cazuela or baking dish. Drizzle with the olive oil and add garlic, oregano, salt and pepper.

Flame Height: 5

Place the baking dish in the doorway of the oven and roast for 30 minutes, rotating the dish 180 degrees half way through. The skins should be lightly charred and the tomatoes just beginning to break down. Let cool.

When cool enough to handle, remove and discard skins. Cut tomatoes in half and squeeze out the seeds and discard. Place the tomatoes in the bowl of a food processor and pulse to purée. You may want to leave it a bit chunky.
