Yield: Enough for four 16 in. pizzas


2 medium to large Eggplants roasted and peeled
2 cloves garlic smashed and minced
Skin from ¼ of a large preserved lemon or zest from 1 whole lemon, minced fine
Juice from ½ large lemon
2 Tbsp chopped parsley or thyme
2 Tbsp EVOO

Salt and pepper to taste



• Fork mash the eggplant in a large bowl

• Mix in remaining ingredients with the fork


For Pizza:

• Spread Baba Ganoush evenly but lightly on opened pizza skin

• Top lightly with mozzarella or your own pizza cheese

• Add roasted vegetables. We use roasted fennel and red & gold bell pepper slices

• Finish with a little extra virgin olive oil and grated parmesan

• Bake as normal for pizza
