Chicago-Style Deep Dish Pizza with Italian Sausage

Yield: Makes 1 ea. 14-in. deep dish pizza


Ingredients

1 ea. Chicago-style deep dish pizza dough recipe
1 lb. Italian sausage in bulk or removed from casings
1 lb. whole milk mozzarella, shredded
2 cups Pizza Sauce
2 oz. Parmesan cheese, grated


Preparation

Oven Temperature: 450-500 degrees

Flame Height: 4

Prepare the dough and press into the pan according to the directions in the recipe.

Place the sausage in a large skillet in the center of the oven and cook for 2-3 minutes, breaking up into small pieces with a wooden spoon as it browns.

 When crust is ready to fill, scatter ½ of the mozzarella evenly over the pie. Layer the cooked sausage over the top and then the rest of the mozzarella. Spread evenly with the sauce and sprinkle the Parmesan over all.

Flame Height: 1

Bake deep dish pizza just inside the doorway of the oven for 20-30 minutes, rotating pan as needed for even cooking.  The crust should be nicely browned and the filling bubbly.  Remove to a rack or pizza screen to cool for 10 minutes before slicing.
