Travis’ Smashed Burger

Yield: Serves 2


¾ lb.ground chuck
¼ lb. ground pork
Kosher salt and freshly ground pepper
2 each Kaiser style hamburger buns
2 Tbsp. olive oil
1/4 cup mayonnaise
1 Tbsp. Dijon mustard
2 tsp.  prepared horseradish
4 slices cheddar cheese
Leaf lettuce, sliced tomato, sliced red onion
Dill pickle spear


Oven Temperature: 570-600 degrees

Flame Height: 5

Mix beef and pork together with your hands, working as minimally as possible.  Divide in half and  smash each onto a cutting board with the palm of your hand.  Push sides together to form a rough patty.  The idea is not to overwork the meat.  Season with salt and pepper.

Heat a cast iron griddle or 2 sizzle skillets in the center of the oven until piping hot, about 5 minutes.

Split the buns in half and drizzle with oil.  Toast the buns face down on the griddle until golden brown.

Mix the mayonnaise, mustard and horseradish together for the burger sauce.

Place each burger on the hot cast iron and cook in the center of the oven for 2-3 minutes.  With a spatula, flip burgers over rotate 180 degrees at the same time.  Cook for another 2- 3 minutes until done to your liking.  Top with cheese about 30 seconds before the burgers are done.

Spread some sauce on each side of both buns.  Add the burger and condiments and serve with a pickle
