Char Siu Chinese Style BBQ Pork

Yield: Serves 4-6


3 Tbsp. hoisin sauce
3 Tbsp. soy sauce
3 Tbsp. ketchup
2 Tbsp. rice wine or dry sherry
1 Tbsp. minced garlic
1 Tbsp. minced ginger
1 tsp. sesame oil
1 tsp. paprika
½ tsp. Chinese Five-spice seasoning
2 lb. boneless “country style” pork ribs
¼ cup honey
2 Tbsp. water
1 ea. star anise, lightly crushed


Oven Temperature: 550-580 degrees

Mix first 9 ingredients together to make a marinade for the ribs and pour into a gallon zip-lock bag.  Add the pork and refrigerate for at least 6 hours or overnight.

Place the honey, water and star anise in a glass bowl and microwave for one minute.  Let steep for 30 minutes or more.

Flame Height: 1

Place a rack over a sheet pan and arrange the ribs on top.  Place in the doorway of the oven and pour in water to come about 2/3 of the way up the side of the pan.  Carefully slide pan toward the center of the oven and roast for about 45 minutes, rotating, turning and basting with the honey glaze every 10 minutes.  Watch the water level and add more as necessary.  Finish the meat with a higher Flame Height if needed to produce a slightly charred exterior.
