Bistro 4836

The Bistro Home 4836 features a standard door opening 24 inches wide x 7.5 inches high. 5.8 square feet of cooking surface allows for the preparation of an array of foods – perfect for entertaining. With its 36″ depth, this oven fits easily into the kitchen. This oven comes standard with heat shield doors and a built-in timer that allows the user to schedule the time the oven will turn on. The Bistro Home 4836 comes standard with a stainless steel finish but is also available in other configurations.

All Wood Stone Home Ovens can be installed indoors or out and are listed for residential use.

The Bistro Home 4836 is a gas-fired only. Gas type (natural gas or liquid propane) must be specified at the time of order. The ceramic interior is heated by a powerful, adjustable radiant burner located in the back of the oven chamber. The burner is controlled exclusively by the user and the heat distribution in the oven can be adjusted to meet the needs of a variety of menu items.

The dense, high temperature ceramic formulation of which the monolithic, cast-ceramic floor and the  monolithic dome are cast creates a “deep heat sink” within the chamber of the oven. The hearth and dome are connected by a carefully tensioned stainless steel exoskeleton, which ensures structural integrity and long life.  All Wood Stone Home ovens are fully assembled and ship as one piece on a heavy duty frame. (No assembly required!)

There are many facade options available. Please review our facade tutorials to learn more.

Installation Details

Installation and Operation Manuals

The oven arrives crated and ready for assembly. For ease of installation the oven can be turned on its back to fit through 32 inch openings. For an outdoor installation, please be aware that our ovens are not water-tight; making a roof over-hang or a cover necessary. Some types of facade work can also make the oven weather tight.  For more detailed installation information and our or installation solutions page.

A chimney duct is necessary for venting your oven, whether it is an inside or outside installation. Multiple factors determine the length and number of elbows for the duct. All inside installations require an exhaust fan mounted directly to the chimney duct. If you are not using a fan on the end of the flue duct (outdoor installations only), you will need to install a weather cap to protect the oven from water or debris going down the flue. For more detailed information please visit our ventilation page.

Cooking & Operation

The secret of stone-hearth cooking is the Stone. The single-piece floor and dome of the oven are made from specially formulated high-temperature refractory "stone". Our unique construction method and materials produce a deep heat sink (storage of heat) effect that guarantees consistent floor temperature, insuring even cooking temperatures and ease of preparations for all your meals.

We know this is the world’s best pizza oven, but can you do more than pizzas? Absolutely! Regardless of the cooking application -- searing/sauté, roasting, braising, baking breads and pastries and baking pizza- it can all be done in the same oven. The heat radiates from all sides retaining the moisture in foods and giving each dish exceptional flavor, color and texture, far beyond the abilities of your standard gas or electric oven.

Production Capacity

While our ovens cook many menu options, we use pizza as our gauge for oven hearth size comparisons.
